Basic Buttercream

Ingredients
1 cup butter or margarine, at room temperature
1/4 cup milk or heavy cream
2 teaspoons vanilla extract,
or other desired flavoring
2 pounds confectioners' sugar
Preparation

Beat butter for a few seconds on medium speed, just to make it creamy. Add the confectioner's sugar, one cup at a time, and beat on medium-high speed until all sugar is added. Add the milk and vanilla and beat on high speed until the texture is light and fluffy, about 3 minutes.

Chocolate Buttercream: For a simple chocolate buttercream that's good for piping, add 1/2 cup of unsweetened cocoa and 2 tablespoons of cold, strong coffee to the basic buttercream recipe.
Yield:
5.0 cups, enough to fill and frost a 9" double layer cake
