Baking Powder Scones

These scones were served with clotted cream, jam and tea at the Smoke House in the Malaysian Highlands. Very British! They are richer than biscuits by the addition of cream and eggs. Fine with a light luncheon too. Sift: 3 tsp. baking powder 1 tbsp. sugar 1/2 tsp. salt

Cut into these ingredients until the butter is the size of small peas, using a pastry blender or 2 knives:

Beat in separate bowl:

Reserve 2 tablespoonfuls of this. Add to the remainder and beat:

Make a well in the dry ingredients. Pour the liquid into it. Combine the ingredients with a few swift strokes. Handle the dough as little as possible. Place it on a lightly floured board. Pat it until it is 3/4 inch thick. Cut it with a knife into diamond shapes or use a round biscuit cutter. Brush them with the reserved egg, sprinkle them with:

Bake them in a hot oven (400 degrees) for about 15 minutes. Butter them and add strawberry jam. Makes about 12 scones.
