Knekkebrød: Norwegian Crisp Bread
Ingredients
2 dl. (3/4 cup slightly rounded) rye flour
2 dl. (3/4 cup slightly rounded) spelt flour
4 dl. (1 1/2 cups slightly rounded) medium-sized oats
2 dl. (3/4 cup slightly rounded) sunflower seeds
2 dl. (3/4 cup slightly rounded) flax seeds
1 tsp. salt
4.5-5 dl. (about 1 3/4 cup - 2 cups) water

In a bowl, mix all the dry ingredients together, then add the water. Blend well together until a homogenous dough is formed.

Line two baking sheets with baking paper. Preheat a convection oven to 160C (320F).

Using a spatula, divide the dough in two and spread each piece on the separate baking sheets. Spread the dough evenly and divide into suitable pieces with a pizza roller or knife.

Place one baking sheet at the bottom of the oven and the other one at the top. Bake for 50-60 minutes. Halfway through the cooking time, change the position of the two sheets.
