Baked Corn Casserole

Ingredients

1 pkt corn muffin mix - (8 1/2 oz)
1 can whole-kernel corn - (15 3/4 oz) drained
1 can cream-style corn - (14 3/4 oz)
1/4 cup butter softened
1 egg

Preparation

Preheat the oven to 350 degrees. Coat a 2-quart casserole dish with nonstick cooking spray.

In a large bowl, combine all the ingredients; mix well. Pour into the casserole dish.

Cover and bake for 30 minutes. Uncover and bake for 30 to 35 more minutes, or until set and the top is golden.

This recipe yields 4 servings.

Comments: To give this a sprinkling of color, mix in some chopped red bell pepper along with the other ingredients.
