Baked Green Curry Chicken

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

400 grams Debone Chicken Meat (cut to bite size)
20 grams Basil Leaves (optional)

Preparation

Arrange chicken/duck meat in a casserole.

Add in the Green Curry Paste. Let the meat marinate a while.

Bake at about 200°C for about 20 minutes (if meat not cook, add another few minutes). Flip the meat at least once.

About

Initially is green curry chicken cooking in the glass pot but the pot broke on the stove half way cooking. So I opt to baked in the oven instead. Came out taste good. We like it.

Green Curry Chicken

Ingredients:

100g Green Curry Paste
400g Debone Chicken Meat / Roasted Duck Meat (cut to bite size)
200g Coconut Milk
50ml Water
20g Basil Leaves (optional)
1 tbsp Oil
Method:

1.Heat 1 tbsp oil and fry chicken/duck over high heat until cook (about 5-7 minutes).
2.Add in the Green Curry Paste and cook for 3-4 minutes.
3.Lower the heat, add in coconut milk, water & Basil leaves (optional) and bring to boil.
4.Read to serve.
