Golden Gazpacho

Ingredients
2 Larges Yellow Heirloom Tomatoes
1 1/2 cups Water
2 tablespoons Extra virgin Olive Oil
2 tablespoons White Wine Vinegar
1 teaspoon Kosher Salt
Cucumber, chopped for garnish
Onions, chopped for garnish
Croutons for garnish

About
Gazpacho is originally from Spain and was essentially a bread soup, tomatoes were added later after they were introduced from the Americas. To make this version use those bright yellow heirloom tomatoes with red streaks. The final soup comes out with a bright peach color and a rich tomato flavor.
