Mock Beef (Soy Protein) Dumplings

Ingredients
3/4 pound soy protein (Lightlife Smart Ground veggie protein crumbles)
1/2 cup chopped yellow onion
2 1/2 tablespoons minced fresh ginger
3 cloves garlic, minced and crushed into a paste
1 tablespoon olive oil
6 tablespoons water
Salt and ground pepper
1 package of dumpling wrappers
Preparation

In a large mixing bowl, combine the soy protein crumbles, onion, scallions, ginger, and garlic.

Mix well using a large spatula or your hands.

Add the salt, pepper, olive oil, and water.

Continue mixing for a little bit.

Shape the dumplings. One way is to fold the wrapper in half and make a series of pleats from one side to the other.

Serve with your favorite dipping sauce.
