Pre Heat the oven to 350 degrees

Dip chicken tenders in egg whites

Mix together the whole wheat crumbs and unsweetened coconut

Roll eggie Chicken in the breadcrumbs/coconut mixture

Place on a cookie sheet in bake for 20 minutes

Two Fantastic Recipes!!!

Well, dinner tonight consisted of two really good recipes that I will post for you guys here, but first let me back up. Since I wanted my afternoon post to be devoted to National Love Your Body Day, I didn’t post my meals. I will do that here for you guys now.

Around 9am, the counselor I was shadowing (who was super great by the way and happens to be my neighbor), gave me and her intern Alyssa (who was so awesome too!) a homemade muffin.

It had bananas and dried cranberries! SO GOOD! My day at the High School was awesome! My neighbor is really great at her job, I love how the school counseling program is structured (the kids have the same counselor all four years). I got to help out a little too which I loved. She is counseling seniors on college stuff and having worked in Admissions for two years I liked jumping in a helping out. Her intern was there too and was great an answering questions. Overall, I had a great day! It was an early release day, so I was home by about 12:20pm.

Here is my outfit for the day:

Black and White Hounds Tooth pants (GAP), White Cami (GAP), Green Cardigan (Old Navy), Black Flats (Anne Klein).

I love pairing black and white with a solid bright color! I adds a little kick to it and makes it fun. I really love cardigans because you can do a lot with them. I am sure you guys have noticed that! When I got home I made a quick lunch and watched some TV on the coach with Oscar…perfect afternoon.

I made a turkey, american cheese and hummus sandwich on a whole wheat tortilla pressed on the Forman.

I also had a salad on the side: spring mix, tomatoes, red peppers, cucumbers, carrots and three bean salad, vinegar.

A few hours later, I got snacky and I had some of these (addicted!).

While writing my National Love Your Body Day post, I had a cup of decaf.

Around 6:15, Adam got home (he is coaching 8-10 year olds in basketball now, so cute, right?) We went for a 4 mile run, we ran at a nice easy pace. This run made me realize it is time for new running shoes. When my shoes wear out, I get some ankle pain and hip pain on my left side. I am hoping to find the money really soon to replace them!

Like I said ,dinner consisted of two great recipes. First up, Coconut Chicken Tenders.

This is all you need:

One package of chicken tenders, egg whites, whole wheat bread crumbs and unsweetened coconut.

You just dip the chicken in the egg whites, rolled it in a mixture of coconut and ww breadcrumbs. Then place them on a cookie sheet.

Bake for 20 minutes at 350 degrees and enjoy!

Ok, as a side dish I made Sweet Potatoes with Toasted Pecan Butter!!!

You will need:

* Fat Free milk
* 2 sweet potatoes
* pecans
* cinnamon
* brown sugar
* butter (yup, the real stuff!)

Step 1: Poke holes in the sweet potatoes, and place them on a paper towel in the microwave and cook for 10 minutes (turn over after 5).

Step 2: Once, the potatoes are done wrap them in a clean dish towel and let them sit for 5 minutes.
In the meantime, you want to make the butter:)

Step 3: chop up the pecans (I toasted them earlier in the afternoon, but to toast just cook them for like 5 minutes at 350 on a cookie sheet.), then mix the pecans with, 1 TBS. of melted butter, 1TBS. of Brown Sugar, and 1/4 a tsp. of cinnamon! It will look like this.

Yum right!

Step 5: After the the potatoes have been in the towel for 5 minutes cut them open and dig put the…what is that stuff called? Guts? Pulp? We will go with pulp…pull out the pulp.

Step 6: Add 3 TBS of Milk, a pinch of salt and 1 TBS. of brown sugar and mix.

Step 7: Add your butter mix and enjoy!

Both of these recipes are great and have a ton of flavor! I really loved them and dinner was ready in 20 minutes, I cooked them at the same time, but didn’t want to overlap the recipes so you guys don’t get confused.

I added some steamed green beans and called it dinner!!! There are leftovers, so expect to see more of this stuff!
