Broccoli Tofu Pie

Ingredients

21 ounces firm tofu
3/4 cup milk substitute or water
1/4 cup nutritional yeast flakes
1 teaspoon salt
1/8 teaspoon turmeric
1/2 teaspoon onion powder
1/4 teaspoon nutmeg

Preparation

Bake pie crust for 10 minutes at 350 degrees

In food processor, combine tofu and seasonings. Blend until smooth

Stir broccoli into tofu mixture

Scoop filling into baked crust

Bake 40 - 45 minutes at 350. Top will be lightly browned and puffy

Rest 15 minutes before cutting

Tastes fantastic at room temperature or cold

This is a thick, savory pie. It is a great finger food for the kids, and travels well. We like to eat it the next day even better. Enjoy!
