Cranberry Oat Bran Muffins
Ingredients
2 cups flour
1 cup oat bran
1/2 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt (optional)
1/2 cup Miracle Whip Cholesterol Free Dressing
3 egg whites, slightly beaten
1/2 cup skim milk
cup orange juice
1 teaspoon grated orange rind
1 cup coarsely chopped cranberries

Low Cholesterol. Makes 1 dozen.

Preheat oven to 375 degrees. Line 12 medium muffin cups with paper baking cups or spray with vegetable cooking spray. Mix together dry ingredients. Add combined dressing, egg whites, milk, juice and rind; mixing just until moistened. Fold in cranberries. Fill prepared muffin cups almost full. Bake 15 to 17 minutes or until golden brown.
