Fish With Summer Vegetables

Ingredients
1/2 teaspoon Pepper
1/2 teaspoon Paprika
2 tablespoons Grated Parmesan cheese
1/2 cup Carrots, julienned
1/2 cup Zucchini, julienned
Preparation

Mix together pepper, paprika and Parmesan cheese.

Put one-fourth of mixture on each fillet.

Roll fillet with seasoning side on the outside and place seam side down in a 9 inch microwave dish. Set aside.

In a small mixing bowl, microwave butter until melted.

Add carrots and zucchini to the melted butter; cover and microwave on high 2 minutes - stir and microwave 2 more minutes.

Spoon vegetable mixture over fish, then cover and microwave on high 6-10 minutes or until fish flakes easily with a fork.

Let set for 4 minutes before serving.

Serve with lemon wedges.
