Pecan Macaroons

Ingredients

1 cup sugar
1 tablespoon honey
2 cups cornflakes
or
2 cups Rice bubbles
1/2 cup chopped pecans
1 cup coconut
1/2 teaspoon vanilla essence

Preparation

Preheat oven to 350 F.Beat the egg whites until stiff peaks form. Gradually and carefully fold in the sugar, honey and vanilla, then the cornflakes, nuts, and coconut.

Drop teaspoons of mixture onto a greased baking tray, leaving space in between for mixture to spread.

Bake 350 F for 15-20 minutes and allow to cool on the baking tray.
