  • 1 pounds Capellini pasta, cooked
  • 4 cups Fresh arugula leaves
  • Salt and pepper
  • 1/4 cups Chopped parsley
  • 1/2 cups Chopped scallions
  • 1/2 cups Clam juice
  • 1 teaspoons Lemon zest
  • 2 tablespoons Lemon juice
  • 2 tablespoons White wine
  • 3/4 pounds Large shrimp, peeled, de-veined
  • 8 Sliced Shiitake mushrooms
  • 1/4 teaspoons Red pepper flakes
  • 4 Chopped garlic cloves
  • 1/4 cups Minced shallots
  • 1/4 cups Olive oil

Instructions

Step 1

In a large saute pan, heat the olive oil.

Saute the shallots, garlic, and red pepper flakes.

3 minutes

Add the mushrooms and shrimp and cook until shrimp are cooked through.

Add the white wine, lemon juice, clam juice, lemon zest, scallions, and parsley.

Allow to simmer to blend flavors.

To serve, toss together the arugula, pasta, and shrimp mixture.
