Herbed Mayonnaise
Ingredients
1 whole egg
1 tablespoon lemon juice
1 tablespoon sea salt
1 teaspoon freshly-ground white pepper
2 tablespoons Dijon mustard
2 cups canola oil
1 cup olive oil
1 cup chopped fresh herbs

Blend together the first 7 ingredients. With the food processor running, slowly drizzle canola oil and olive oil. If it's too thick, thin with water - too thin, add more oil until you achieve the right consistency.

Mix in the chopped fresh herbs.

About
You can make your own mayonnaise in a food processor with this recipe. For the herb flavor, thyme, rosemary and tarragon are our favorites, but just about any kind will work. You can also use a good quality mayonnaise like Hellmann's or Best Foods and skip Step 1.
