Mabo Don

Ingredients

2 tablespoons oil
1/2 inch fresh ginger, sliced
2 clv garlic, chopped
1 teaspoon red chili flakes or fresh chili pepper, chop
1/4 pound lean ground pork or ΒΌ lb. lean ground beef
2 green onion, chopped
1/2 pound medium or firm tofu
2 tablespoons soy sauce
1/2 cup water
1 teaspoon cornstarch

Preparation

Heat the wok or high-sided frypan over high heat and add oil. Add the ginger, garlic and chili to the wok, and cook, stirring constantly, for 1 minute. Then add the pork or beef and cook for 2-3 minutes, stirring to break up the clumps of meat.

In the meantime, have someone chop the green onions and cut the tofu into small cubes. Add the green onions and tofu to the wok and cook for 2 minutes, then add water.

Mix together the soy sauce, sesame oil and cornstarch in a small bowl, and pour it into the wok. The mixture will thicken as soon as it boils (almost right away). Stir and serve over rice, garnish with chopped green onions.
