Quick Mashed Potato Fudge

Ingredients

3 sq. bitter chocolate
3 tablespoons butter
cup mashed potatoes
1/8 teaspoon salt
1 teaspoon vanilla
1 pound powdered sugar

Preparation

Melt chocolate and butter over hot water. Then add mashed potatoes, salt and vanilla. Mix thoroughly and blend in powdered sugar. Knead until smooth. Press into 8 inch square pan. Let it cool and then remove and cut into squares.
