Mange Tout Sauce For Pasta

Ingredients

1/2 pound mangetout (known also as snow peas or snap peas)
2 fresh tomatoes, roughly chopped
1/2 cup olive oil

Preparation

Heat the olive oil, drop in the diced garlic and let it soften but not brown

Add the chopped chilli pepper, soften but not brown

Add the chopped fresh tomatoes, let them melt down partly

Stir in the topped and tailed mangetout

Season with salt and pepper to taste

Cook 7-10 minutes uncovered
.

Yield:

3.0 depending on pasta serving
