Creamy Red Pepper Gazpacho
Ingredients
2 large tomatoes, cored and roughly chopped
1 roasted red pepper, peeled and roughly chopped
1 1/2 cups plain yogurt
1/4 cup extra virgin olive oil
12 fresh basil leaves
2 large garlic cloves, roughly chopped
2 scallions, roughly chopped
2 teaspoons kosher salt
1/2 teaspoon red pepper flakes
1/2 teaspoon ground black pepper
Mozarella cheese for garnish
