Bran Muffins With Chocolate Filling

Ingredients

1 teaspoon baking soda
8 ounces low-fat cream cheese, softened
1 teaspoon baking powder
1/4 cup sugar
2 tablespoons +1 cup skim milk
Batter:
2 eggs, slightly beaten
1 teaspoon vanilla extract

Melt the chocolate chips in a microwave or double boiler; set aside to cool. Cream together the cream cheese, sugar, 2 tablespoons of the milk, and the melted chocolate until smooth and well blended.

In a separate bowl, combine the flour, brown sugar, baking soda, and baking powder.

Cut in the butter, and mix well until crumbs form.

In another bowl, combine the cereal and the remaining 1 cup of milk.

Let stand for about 5 minutes or until the cereal softens.

Stir in the eggs and the vanilla.

Pour the bran mixture into the bowl with the dry ingredients and stir until moist.

Lightly coat a muffin tin with cooking oil spray and scoop the batter into 12 muffin cups, filling each halfway.

Pour the chocolate mixture over the bran batter, dividing it evenly among the muffin tins.

Finish with another layer of the batter.

Bake 15 to 20 minutes or until the tops spring back when touched.

Makes 12 muffins (at about 500 calories each--DECADENT!).
Uses 2 large + 2 small bowls for preparation.
