Snickerdoodle Sandwiches

Ingredients

1/2 cup • butter, softened
3/4 cup sugar
2 teaspoons vanilla
1/2 teaspoon almond extract
1 cup flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon cinnamon
2 tablespoons • coconut milk (if you don’t like coconut milk, can’t find it or just don’t want
Brown Sugar Buttercream
Ingredients
1 stick • of butter, softened
1/2 teaspoon cinnamon
3 tablespoons heavy cream
1 teaspoon vanilla

Cream butter and sugar with an electric mixer until smooth.

Add egg and vanilla, mixing well until combine.

Mix in flour, baking powder, salt, and 1 1/2 teaspoons cinnamon. Mix until dough comes together.

Add in milk. If dough is crumbly, add milk 1 tablespoon at a time until it comes together.

Bake for 10-12 minutes.

Once cooled fill with frosting (if you have any left ;) )

In the bowl of an electric mixer cream butter and brown sugar together.

Add cinnamon and powdered sugar (1 cup at a time so you don’t end up in a huge dust cloud).
