Pico De Gallo Relish
Ingredients
1 medium avocado chopped
          3 mediums tomato chopped
          1 medium onions chopped
          1 teaspoon jalepeno pepper finely chopped
          2 tablespoons chopped fresh cilantro
          1 tablespoon fresh lime juice
          1 tablespoon canola oil
          (or other vegetable oil)
          Salt to taste
          Freshly-ground black pepper to taste
      Preparation

In a small bowl, combine tomato, onions, jalapeno, cilantro, lime juice. Add salt to taste.

Onions will be "cooked" with the lime juice, so flavor is not that strong.  Salt is important.

Refrigerate 12 hours for flavors to blend.

Add the avocado just before serving..

Comments: Look for pebbly skinned Haas avocados: their flavor is richer and their texture creamier.
