Quinoa and Vegetables

Ingredients

1 bell pepper, diced
1 small cucumber, diced
2 tablespoons rice vinegar
1 tablespoon olive oil
Salt & pepper to taste.

Preparation

Bring 2 cups of water to a boil in a medium saucepan.

Add quinoa and simmer for 14-18 minutes or until fluffy.

Drain.

In a medium bowl, mix quinoa and all ingredients together.
