Easy Caribbean Style Fried Flying Fish

Ingredients

1 pack frozen Flying Fish (usually contains 5)
1 tablespoon Salt
5 tablespoons Fresh Herb Seasoning
1 cup Flour
1 teaspoon Baking Powder
Canola Oil for shallow frying

Preparation

Remove Flying Fish from the package and allow to thaw.

Place Fish in a bowl. Add salt and juice from the lime.

Allow to sit for 5 minutes then rinse with water.

Next it's time to add seasoning to the fish.

Place 1 tbs of Fresh Herb Seasoning into the slits of each fish.

Mix flour and baking powder.

Coat fish with flour mixture.

Fry Fish on medium heat until golden brown.

Flying fish is the fish of choice on the island of Barbados... it is part of the national dish - Flying Fish and Cou Cou. This fish is very versatile and can be cooked in a variety of ways and goes well with a wide range of staples.
