Spicy Pork

Ingredients

8 ounces Pork tenderloin, cut in bite size pieces
1 tablespoon vegetable oil
1 tablespoon Ginger, minced
1 large Garlic clove, minced
1/2 teaspoon ground coriander seed
1/4 teaspoon Turmeric
1 teaspoon ground cumin
1/4 teaspoon Red pepper flakes
1/2 cup Beef stock or broth

Preparation

Prepare the rice first.

Heat oil in a non-stick pan. When the oil gets very hot, add garlic and ginger and fry for 30 seconds, stirring constantly.

Add pork and fry until it is browned on all sides.

Throw in the spices and stir. Cook for 30 seconds. Add the broth.

Continue cooking until broth is reduced a bit and pork is done.

Season with freshly ground pepper and lime juice. Serve over rice.
