Crab Stuffed Tilapia W/ Jasmine Rice & Asparagus (Complete Meal)

Ingredients

Ingredients:
1/2 cup butter (unsalted preferred for flavor)
16 ounces crab meat consisted of: 8 oz. lump and 8 oz. claw
1/4 cup ground pecan meal
6 diced raw, deveined and tail-off shrimp
2 tablespoons lemon juice
1 teaspoon cayenne pepper
10 (4 ounce) tilapia fillets
1/4 cup melted butter, 1 teaspoon Extra Virgin Olive Oil with 1 tablespoon SMOKY

Preparation

Flake the crabmeat while checking and dispensing shell particles

In medium-hot non-stick skillet, sauté onion and celery in butter until tender

Add parsley and remove from heat.

Stir in bread crumbs, crabmeat, shrimp, lemon juice , and cayenne pepper

Spray cookie sheet with olive-oil cooking spray

Spread the mixture over the tilapia fillets and roll tightly placing seam side down . BRUSH the melted paprika, oil, and butter over each tilapia.

Place leftover stuffing around fillets OR freeze for future preps)

Place in a 400° oven for about 20-25 minutes until tilapia flakes easily with a fork
