Basic Salmon Loaf Or Patties

Ingredients
1 can (24 ¾ oz.) or 2 cans (7 ½ oz.) pink salmon
2 cups soft bread crumbs (about 3 slices bread, cut into s
cup finely minced onion
cup finely minced celery (opt.)
2 eggs or ½ c. Second Nature substitute
2 tablespoons minced parsley
1 tablespoon lemon juice
1/4 teaspoon each salt
Dash of pepper
Preparation

Drain salmon, reserving 2 tablespoons liquid; flake. Combine all ingredients. Place in well-greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan or shape into loaf on greased baking sheet. Refrigerate for 1 hour, approximately. Bake at 350 degrees for 45 minutes.
