Midnight Moon Summer Bean Salad
Ingredients
2 ounces Midnight Moon Goat Cheese, shaved
1 can cooked white beans, drained
1 cup of fresh broccoli mini-florets
1 ear white corn
1/2 cup cilantro, chopped
1 teaspoon Serrano pepper, chopped
freshly ground pepper
Preparation

Wash broccoli, Serrano pepper and chop into small pieces.

Drain can of good quality beans and place in a medium mixing bowl. Add the broccoli and pepper.

Remove husk of white corn ear and then microwave briefly until just opaque. Let cool, then take a knife and slice off the tender kernels right into the mixing bowl.

Pull off a handful of cilantro, wash and shake off the excess water, dry in a paper towel if needed. Tear or chop and add to the mix. Toss the mixture.

Then, thinly shave or slice a small amount of Midnight Moon Goat Cheese over the top, and grind some fresh black pepper.
