Savory Cheddar Pie

Ingredients

Pie Shell:
3/4 cup flour
1/2 teaspoon salt
1/2 teaspoon ground mustard
1 cup cheddar cheese, shredded
1 cup butter or margarine, melted
Filling:
2 cups onion, chopped
3 tablespoons butter or margarinne
1 cup mushrooms, sliced
1 cup thin egg noodles, cooked and drained
1 cup milk
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup cheddar cheese, shredded

For pie shell: sift flour, salt and mustard into a medium bowl. Stir in cheddar cheese and melted butter. Mix thoroughly. Press evenly onto bottom and sides of a deep dish 9-inch pie plate.

For filling: over medium heat, saute onion in butter until soft, about 5 minutes. Add mushrooms and cook 5 minutes more. Remove from heat and combine with noodles. Spread over crust in pan.

In medium bowl, beat eggs. Add milk, salt and pepper. Pour over noodles. Sprinkle with remaining cheese.

Bake in preheated oven for 35 to 40 minutes, until custard is set. Remove from oven and cool 10 minutes before serving.
