Banana Chocolate Chunk Muffins

Ingredients

3/4 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter (melted)
1/2 cup plain yogurt
1 teaspoon vanilla extract
3/4 cup bittersweet chocolate bar (coarsely chopped)

Preparation

In a large bowl, combine the flour, brown sugar, baking powder, baking soda and salt.

In another bowl, combine the egg, butter, yogurt and vanilla.

Stir into dry ingredients just until moistened.

Fold in bananas and chocolate chunks.

Fill greased or paper-lined muffin pan two-thirds full.

Bake at 350 degrees F for 22-25 minutes until golden brown or toothpick inserted comes out clean.

Cool for 5 minutes before removing from pans to wire racks.
