Chicken With A Raspberry Champagne Glaze
Ingredients
Glaze
1 C fresh raspberries
2 Tbsp. honey
1 tsp. raspberry vinegar
3 boneless chicken thighs
salt and pepper
2 Tbsp olive oil
Preparation

Add raspberries, honey, and vinegar into a small saucepan.

Bring to a boil.

Turn heat down to medium low and simmer until it thickens, approximately 20 to 30 minutes. Keep warm.

When you get ready to baste your chicken pour out about ¾ of the glaze and keep the rest warm to baste onto the meat right before serving.

Salt and pepper both sides of chicken.

Heat a skillet over medium high heat.

Heat oil.

Brown chicken on both sides.

Heat oven to 375 degrees.

Brush glaze over meat

Bake 15 minutes

Baste chicken again with glaze.

Bake for approximately another 10 to 15 minutes until the chicken is no longer pink and registers 165 degrees with a meat thermometer.

Brush with glaze before serving.

This goes great with rice and brussel sprouts, broccoli, asparagus, peas, or whatever your favorite vegetable side is!
