Clean the Artichoke: 1)Wash 2)Trim off the top about 1 inch or so 3)With scissors, cut the sharp end of the leaves 4)Chop off the hard stem 5)After it's cooked, scoop out the center flowers.

Add the artichoke to boiling water, cook on medium for about 30-40 minutes. Drain.

Place the artichoke on a serving platter.

Drizzle olive oil and lemon juice.

To eat, peel each leaf and eat. It's definitely a finger food!

This basic artichoke recipe is the perfect side dish as it complements almost any main course. It's flagrant and delicious. I used to shy away from artichokes because I did not know how to prepare them. Once I learned, I realized it was not so difficult and had missed out on such a great veggie!
