Photo: Pom Wonderful
Ingredients
1 tablespoon salt
1 pound broccolini (baby broccoli), chopped into 2-inch lengths
2 teaspoons olive oil
1 clove garlic, crushed
1 cup whole milk
1 egg, beaten
1/4 cup grated parmesan cheese
2 tablespoons lemon juice
2 tablespoons lemon zest
salt and black or red pepper to taste
Preparation
1
Score 1-2 fresh pomegranates and place in a bowl of water. Break open the pomegranates under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)
3
Cook pasta according to package directions and reserve 1 cup of cooking water to thin the sauce if necessary. Drain pasta and keep warm.
