Peanut Blossom Cookies

Ingredients

COOKIES:
1/2 cup unsalted butter, softened
2 tablespoons milk
1 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 375 degrees Farenheit

Line 3 baking sheets with parchment paper

In a large bowl cream the butter, using a mixer if available

Add peanut butter, light brown sugar, and 1/3 cup white sugar and beat until light and fluffy (2-3 minutes)

Add the egg and vanilla extract and beat to combine

Beat in the milk

In a medium bowl whisk together the flour, baking soda, and salt

Add the dry ingredients to the wet ingredients and beat until incorporated

Cover and chill the batter for about an hour, or until firm enough to roll into balls

Roll the batter into one inch round balls and then roll them through the sugar reserved for coating

Put the dough balls on the cookie sheets, approximately 2 inches apart

Bake cookies for 8 to 10 minutes, until lightly browned

Remove from oven and press a chocolate kiss into each cookie, pressing down until the cookie begins to crack
14
Cool cookies completely on a wire rack

Be sure to leave cookies on cooling rack until chocolate kisses have fully cooled, or they will smush when you store them.
