Spicy Catfish Fingers

Ingredients

1/2 teaspoon garlic powder
1/8 teaspoon cayenne (use ΒΌ if you like spicier food)
salt to taste
3/4 cup cornmeal
1/2 teaspoon paprika

Preparation

Cut fillets into strips; set aside. Combine garlic powder, cayenne and salt; sprinkle a little on both sides of fish. Let stand for a few minutes.

Combine cornmeal, flour and paprika. Coat fish strips with cornmeal mixture.

Pour oil to a depth of 1 1/2 inches in heavy skillet. Fry about one fourth of fish strips in hot oil (about 375 degrees) over medium-high heat, about 2-3 minutes of until done and golden. Remove and drain on paper towel; set aside. Repeat with remaining fish strips.
