Fresh Tomato Angel Hair Pasta

Ingredients

2 cloves of garlic
9 medium vine ripe tomatoes (or 3 lbs)
2 tablespoons lemon juice
1 teaspoon salt
1 teaspoon sugar
1/2 cup fresh chopped basil

Preparation

I use a mortar and pestle to mash the garlic to a paste with a pinch of salt

Set aside

To prepare the tomatoes:

Core and chop 6 tomatoes (or 2/3)

Halve the remaining 3 tomatoes (or 1/3)

Place a grater in a bowl

Rub the tomatoes against the side with the largest holes, gathering the pulp in the bowl

Discard the skins

In a large bowl, toss together;

Garlic paste

Tomatoes, chopped and pulped

Lemon juice

Allow the flavors to blend. Let stand at room temperature for at least 20 minutes, or up to a few hours.

When you are ready to cook the pasta, bring water to a boil

Cook angel hair pasta for 4-5 minutes (but watch it so it doesn’t get mushy)

Drain the pasta

Combine with the tomato mixture

Add grated Parmesan, and serve…….
