Light Apple and Raisin Bread

2 cups all purpose white flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
2/3 cup brown sugar
1 1/2 cups apples, unpeeled and shredded
3/4 cup raisins

I’m in love with Dr. Cookie! Shhhhh! Don’t tell my husband! Dr. Cookie’s recipes for baked goods are the best. He knows just how to lighten up any treat so that it still tastes terrific.
I had some apples in the pantry ready to go into the compost pile if I didn’t make something with them, so I took out Dr. Cookie and went to work.
I can’t believe how moist and tender this bread turned out. There is literally no added fat, and yet it wasn’t in the least bit dry. A very tasty alternative to my usual yogurt breakfast!
