Grilled Caribbean Chicken Breasts

Ingredients

2 tablespoons fresh orange juice, plus 2 teaspoons
3/4 teaspoon orange peel
2 teaspoons olive oil
2 teaspoons lime juice
3/4 teaspoon fresh ginger, minced
2 cloves garlic, minced
1/8 teaspoon fresh oregano, minced

Preparation

In a blender, combine all ingredients except the chicken. Pour the marinade over the chicken breasts and marinate in the refrigerator at least 2 hours or up to 48 hours. Grill or broil the chicken for about 6 minutes per side until no trace of pink remains.

Healthy and fresh, these grilled chicken breasts require a few hours of marination but are otherwise quick and easy to prepare. Serve with Chablis, Merlot, or Pinot Noir. Prep= 10 min; Marinate= 2:00; Cook= 10 min.
