Scrambled Tofu

Ingredients

1/2 cup sliced fresh mushrooms
1/2 cup finely chopped onions
1/4 cup water
2 tablespoons olive oil
1 pound tofu, drained
4 teaspoons country style chicken seasoning (vegetarian)
1/2 teaspoon onion powder
2 tablespoons yeast flakes, not baking yeast
1/2 teaspoon garlic powder
1/4 teaspoon salt
2 tablespoons fresh chopped chives (put on top after cooking)

Preparation

Wash, drain and mash tofu with fork or potato masher.

In a skillet saute onions and mushrooms in oil until soft.

Add remaining ingredients and stir together until slightly browned.

About

You may also add turmeric for yellowish look, just sprinkle until desired color is reached to resemble egg colored look. This is very nice for lunch or light supper and surprisingly quick and easy.
