Field Mushroom Stuffed With Dolchetta & Spinach

Ingredients

Field Mushrooms - whole
Onion- finely chopped (shallots would work well here too
Closed cup mushroom- thinly sliced (the thinner the better!)
Dolcehtta- gorganzola or any blue vein cheese would work here

Preparation

Turn oven to gas mark 4

Place field mushrooms on an oiled baking tray and put in oven

In a pan melt a small amount of butter

Add the chopped onions

Cook till translucent (if they start to brown add some water)

Add the thinly sliced mushroom

Add splash of wine

Add spinach and cook until it wilts

Take out field mushrooms and add mixture

Add a few cubes of dolchetta to each mushroom

Put back into oven until cheese melts

Serve with glass of white wine
