168 grams caster sugar

1 pch salt
liter grated rind of lemon

Method1 Cream together margarine and sugar until light and fluffy 2 Beat in eggs one at a time3 Foid in sieved flours salt and lemon rind 4 Place mixture in greased 7in/178mm tin and bake in preheated oven

Variations: approxWalnut Cake approx add 30z (84g) walnuts (chopped) and 1/2tsp vanilla essence after adding flour.

Cherry Cake approx add 60z (168g) glace cherries (chopped) after adding flour

Small oven: 150 degrees C approx 1 1/21 3/4 hours PREHEATED bottom shelffan oven: 130 degrees C approx 1 1/21 3/4 hours PREHEATED
