Quadretti With Braised Spring Cabbage

Ingredients

800 grams spring cabbage
1 tablespoon sunflower oil
1/4 teaspoon caraway seeds
1 teaspoon salt
1/4 cup water
200 grams Quadretti pasta (" little squares"," patches")

Preparation

Halve the cabbage and remove any hard parts (cores). Chop into 1 cm rectangle pieces, similar in shape to Quadretti.

Sauté caraway seeds briefly in hot oil in a large skillet.

Add onion and sauté until translucent and light brown in colour.

Stir in chopped cabbage, sauté on high heat for about 5 minutes until the cabbage wilts a little.

Add water, stir and continue to braise over medium heat, stirring occasionally, 20 minutes or until cabbage is soft.

Meanwhile, cook the pasta in a liter of lightly salted water according to manufacturer's instructions (about 8 minutes).

Add the cooked, drained Quadretti to the braised cabbage, stir to coat evenly every piece of pasta with cabbage. Season with freshly ground black pepper.
