There is an explanation about this. Leaving the bean in the water during the night and first time boiling means that bean is going to be easy for the stomach.
Bean is one of the most favorite meals in the Balkans kitchen and there is a hundred ways of preparing.
I like my vegetarian bean with apples.
After boiling and adding vegetables, I bake it in the stove, covered with the cubed apples, about two hours on 175 C.
And stir in there tomato juice or sauce.

If you want, you can make something that we call “zaprska” and that is: Spoon of wheat flour mix with 2-3 spoons of soup or just water (that is the white one); Or, in the hot pan put some butter, then quick add a spoon of wheat flour, carefully, do not leave to get brown, and stir with 2-3 spoons of soup or water and ground red pepper. And stir the bean with it.
