Spinach Soup
Ingredients
4 tablespoons of butter
2 med. onions
20 ounces spinach
6 cups chicken broth
2 cups heavy cream (I can never find heavy cream here, so I use 1 ½ cups milk)
1 teaspoon nutmeg
2 cups grated cheese
Preparation

Melt 2 Tbs. of the butter in pot. Add the onions and saute over medium high heat. When the onions begin to brown, add the other 2 Tbs of butter and all of the spinach.

Cook down the spinach until the leaves are totally wilted.

Pour in the chicken broth, bring to a boil, then let simmer for 5 min.

Remove the soup from heat and puree in a food processor (you can wait for soup to cool)

Return soup to the pot. Add the cream, nutmeg and cheese. Stir. Heat soup until it is very hot, but not boiling.
