Banana Chocolate Chip Cookies With Flax

Ingredients

1/4 cup ground flax
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup white sugar
1/2 cup brown sugar
2/3 cup butter, softened
1 teaspoon vanilla extract

Preparation

Preheat oven to 400 degrees F (200 degrees C). Place parchment paper on cookie sheets. Sift the flour, baking powder, salt, and baking soda together, and set aside.

Cream the butter with the sugar until light and fluffy. Beat in the eggs and vanilla. Mix in the mashed bananas. Add the flour mixture, and stir until just combined. Stir in the chocolate chips. Drop by spoonfuls onto prepared cookie sheets.

Bake in preheated oven for 12 to 15 minutes.

Trevor, my three year old, took some of these cookies to preschool and his wonderful teachers, Margie and Renata (who we LOVE!) asked for the recipe. These cookies are made with whole wheat flour and flax, for added omega 3's. Make sure to use really ripe bananas where the peel is all black. These cookies are a kid favourite, moist and yummy and a bonus is that they keep for quite a while in a air tight container. They will also freeze extremely well. Enjoy!
