Radish Slaw

Ingredients
2 cups radishes, trimmed and grated coarse
3 cups cabbage, finely shredded
1 cup carrots, coarsely grated
1/2 cup red onion, thinly sliced
2 tablespoons fresh lemon juice
1/4 teaspoon sugar
2 tablespoons olive oil
2 tablespoons finely chopped fresh coriander, mint, or parsley leaves
Preparation

In a large bowl, add all cut vegetables.

Toss with lemon juice, sugar and olive oil. Taste and adjust seasoning if necessary.

Add herbs and toss again until incorporated.
