Light Buttermilk Blue Cheese Dressing

Ingredients
1/2 cup low fat buttermilk
2 tablespoons extra-virgin olive oil
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
1/2 cup crumbled blue cheese
Kosher salt and freshly ground black pepper to taste

Place all ingredients in a bowl and mix until well-combined. Break up larger chunks of cheese with a fork.

About
Most buttermilk blue cheese recipes call for mayonnaise and/or sour cream, but buttermilk is so creamy the added fat isn't necessary. Try on your favorite salad or as a dip for crudite. Also delicious with finely minced fresh herbs added, such as chives.

I would leave out the oil completely. The mashed blue cheese will make this creamy enough and you really don't need the extra fat. Mustard will bind the dressing too.
