Prawns and Pineapple Curry

Ingredients

1/2 pineapple- cut into bite size
800 grams prawns
1/4 cup curry powder (I used Fish curry powder)
400 milliliters ml coconut milk+ 200 water

Preparation

Blend onion and pineapple into a smooth paste.

Heat up about 3 tablespoon of cooking oil in a saucepan.

Saute onion mix until fragrant...

Add curry powder with 3 tablespoon of water...

Keep stirring...

Then add coconut milk, with 200 ml water...

Bring to a rapid boil and add on pineapple.

Add prawns last...

Cook until the prawns turned pink...

Turn the heat off...

Sprinkle with some golden fried shallots...

Serve with rice.
