Grilled Chicken Thighs

Ingredients

with sauce au chien
1 tablespoon peeled and slivered or minced garlic
6 scallions, trimmed and minced
paste or
crushed red pepper flakes to taste (start with 1/2 teaspoon)
1/2 teaspoon ground allspice, or to taste
1 tablespoon peanut or canola oil
Freshly ground black pepper
8 chicken thighs, about 2 pounds
Juice of 1 lime

Prepare charcoal or gas grill, or preheat broiler. Meanwhile, prepare sauce:

In small bowl, combine garlic, scallions, chili, salt, allspice and oil. Add 1/2 cup boiling water; stir and set aside. Sprinkle chicken with salt and pepper, and grill or broil, turning 2 or 3 times, until it is cooked through, about 15 minutes. Taste sauce, and add more chili, salt, pepper or allspice if needed.

Stir in lime juice. Serve chicken hot or at room temperature, passing sauce alongside.
