The Farming Wife's Blueberry Muffins
Ingredients
3 cups flour
4 teaspoons baking powder
1 teaspoon salt
1 cup sugar
2 eggs
1 cup milk
1/2 cup coconut oil
2 cups blueberries
Preparation

Combine flour, baking powder, salt and sugar in mixing bowl.

Beat eggs, milk and oil until combined

Pour wet ingredients into dry ingredients

Stir just until combined, still contain lumps.

Fold in blueberries

Using ice cream scoop, fill lined muffin tins.

Bake 375 for 25 minutes

Make a bunch of these and wrap them separately when cooled. Place wrapped muffins into a ziplock bag and freeze - Instant breakfast or snack!
