EGG CURRY
Ingredients
1 small onion, chopped
1 cup water
1 clove garlic, minced
Salt
¼ cup butter
Lemon juice
1 ½ Tbsp. Madras curry powder
2 tsp. tomato paste
6 hard-cooked eggs, cut in ½ lengthwise
Preparation

Sauté the onion and garlic in butter 2-3 minutes.

Add curry powder, tomato paste, and water.

Simmer about 10 minutes; add salt and lemon juice to taste.

Add eggs, reheat and serve with rice and accompaniments such as chopped peanuts, raisins, grated orange rind, chopped parsley, chopped onion, chutney and coconut.
